Spring is in the air and with the new season, comes a whole host of new bar openings. From sophisticated drinks lounges at the newly opened Rosewood Hong Kong, to Japanese cocktail bars and more, there are plenty of new spots to check out this April. And with the Sevens weekend upon us, there are numerous drinks deals around town to keep you hydrated, not to mention a new happy hour or two to make the most of over the Public Holiday weekends.

DarkSide
Now open in the luxurious Rosewood Hong Kong, DarkSide offers speciality cocktails, coveted vintage cigars, a choice selection of wine and spirits, and nightly live jazz sessions. THE SEA by The Old Man
THE SEA by The Old Man opened its doors in mid-March and is the second venture from the team behind SoHo favourite, The Old Man. Winning much acclaim and various awards in 2018 for The Old Man (including number 10 on World’s 50 Best Bars, and number five on Asia’s 50 Best Bars), we have high hopes for the team’s new opening. Described as a “rustic spin-off” of its sister venue, THE SEA is once again inspired by Ernest Hemingway’s 1952 hit novel The Old Man and the Sea, and will serve a new wave of modern cocktail creations. With prices starting from $90, the drinks will highlight the most innovative methods in modern mixology as well as culinary techniques such as fermentation, sous-vide cooking and rotary evaporation, though will be presented in a humble, rustic and simple style.

Gishiki Lounge
Found in Tai Kwun, Gishiki Lounge will be opening its doors this spring. Opening alongside the acclaimed, Sushi Zo, the bar promises to offer “a mischievous alternative to the elegant sushi restaurant” with its menu of 18 unique libations. Inventive cocktails are set to be made from flavoured ice blocks pressed into the shape of Hannya masks, exclusive Gishiki label gold leaf sake and live siphon brewed spirits, served over dry ice. The bar will also specialise in an impressive selection of international craft spirits, signature sakes and organic wines.

THE CODE
Newly opened in the heart of Central, THE CODE, is home to over 180 fine wines and over 200 craft gins. So whether your tipple of choice is a nice glass of vino or an icy G&T, you’re sure to find it here, and the 4,000 square foot space will lend itself to everything from Friday night drinks, to private and corporate events. Along with a huge selection of spirits and wines, THE CODE’s menu will feature a range of unique cocktails that will change with the seasons. The bar will also frequently host top tier bartenders from all over the world, who will be given the chance to bring their own flair and signature cocktails to the menu.

Hutong
In seasonal spirit, Hutong is serving up an Elixirs of Spring cocktail menu. The new offerings feature and celebrate traditional Chinese ingredients, with drinks including The Yellow Dragon ($158), made with Tanqueray Gin, limoncello, yuzu purée, fresh lemon juice, honey and a dash of osmanthus flower Chinese sweet wine. We also love the sound of the spicy Chuan Energy ($158), combining Ketel One Vodka with vanilla pods and lychee liqueur, along with Sichuan chilli, honey and lime juice. Available daily from 12pm to 12am, the drinks are sure to be the perfect accompaniment to Hutong’s Northern-Chinese cuisine.

Chifa
If you fancy enjoying an al fresco drink or two, head to Chifa between 5pm and 7pm every day for its new Chilcano O’Clock happy hour. For just $48, guests can enjoy Pisco Sours flavoured with either jasmine, green tea, seasonal fruit or passionfruit, and a range of wines, beers and spirits are also included in the deal. If you’re feeling peckish and want some street-side dim sum, the happy hour also includes a range of appetising bites, including Duck Spring Rolls, Impossible Dim Sum and more (all $48).

FINI’s
The recently rebranded FINI’s is now serving up what’s sure to be one of the most popular happy hours in town. Available in both its Wan Chai and SoHo locations, swing by between 5pm and 7pm on weekdays to enjoy the Beer & Wings deal.
