I’ve mentioned over and over that I did not get blessed with the cooking gene! So when it comes time for me to decide what’s for dinner, I usually don’t think about buying ingredients or whipping something up.
Flipping through a magazine I came across this ridiculously simple recipe that even the I could tackle. Being that I acually had success with this, I thought I should share this Chicken Curry Taco creation with you all!
What you need:
4 cups cooked chicken breast, chopped
1/2 cup red onion, chopped
1/2 cup raisins (optional)
1/2 cup pecans or other nuts of your choice
1 teaspoon curry powder
3/4 cups mayonnaise, or to taste
4 taco shells
What to do:
Combine the chicken, onions, raisins, nuts, curry powder and mayonnaise. Season with some salt and pepper. Refrigerate for at least one hour or until you are ready to serve. Place the curry chicken salad into the taco shells.
I told you this would be simple!
