Available now, the new brunch will take place every Sunday from 12:30pm to 3pm and promises a memorable experience from start to finish. The semi-buffet feast kicks off lavishly with freshly shucked French oysters served to the table, followed by made-to-order scrambled eggs and creamed green asparagus, topped with lavender foam. Once your appetite is whet, move onto the impressive spread of all-time favourites, including everything from salads and seafood, to charcuterie, cheeses and a selection of fresh pastries. It may be best to plan ahead and skip breakfast, as you’re sure to be making a beeline towards the carvery station, featuring crispy and succulent Roast Peking Duck, before tucking into some Gemelli Pasta.

After the buffet offerings, guests can choose from a selection of six main courses. Options include Green Pea Barley Risotto, with Hon Shimeji mushroom, crispy shallot and light Parmesan foam, and Roast Chicken Roulade, accompanied with heirloom carrots prepared three ways. And if you’re looking to really indulge, guests can opt for the Half Maine Lobster Thermidor with brown butter béarnaise sauce (additional $98), or Grilled Dry-Aged Australian Prime Beef Rib Rye (additional $128).
